This throwback is a fun one. I was volunteering at Urban Acres at the time. Those hot mornings of packaging boxes were so much fun! I miss that place! This post originally aired on August 25, 2014.
I am familiar with the zucchini and similar line of them. Those are good for frying and making bread and muffins. Summer is just not summer without zucchini bread.
I am not so familiar with the unique winter squash. I figured it was going to be a fun adventure when one, my mother-in-law said they were normally cut in half and people put butter, cinnamon and brown sugar on them and two, I opened them up to see and smell something very similar to pumpkin!
After scooping out the seeds, I cut it up and sprinkled a generous amount of Parmesan cheese, salt and pepper.
Then I added oil to the pan and placed it in a 350 degree for 15-20 minutes (I kind of lost track of time).
Afterwards, I let it cool for a few minutes and we ate. The squash was very good, it reminded me of sweet potato fries.
