I have to admit, I was a bit disappointed this past holiday season.
For the first time since I can remember I did not get any cranberry jello mold.
Naturally, when I got home from our adventures, I texted my mom begging for the recipe- bitmoji and all. As always, she saved the day.
This recipe is special because I can remember when we first fell in love with it as a family and it has carried us throughout my childhood.
It got the name because you can use a mold, turning it into all kinds of cool things. My Aunt Leslie made it for Thanksgiving when I was seven or eight. The colors were beautiful and her jello mold was shaped as Santa Clause and, naturally, any young child would fall for Santa shaped foods.
A few years later my mother divorced Aunt Leslie’s brother (who was my step-father) and even though we no longer had it at their parents’ house, my mother still made it for us.
Now I am thirty-something and occasionally make it for myself during the year. My students think I am crazy because I dig into it before it’s finished and will carry the bowl around eating the sweetly tangy recipe. They just don’t understand- after not getting it for the months of November and December- I crave the softness of the jello with the crunch of the pecans.
Try it for yourself!
Boil one cup of water, add in two smaller raspberry jello packages. Stir until well combined.
Next, add one can cranberry sauce. Blend well.
Side note: I chose to do this with an immersion blender. It was very helpful!
Add in a twenty ounces of canned pineapple and one cup chopped pecans.
Side note: If you don’t have pecans, walnuts work well too!
Hardest part- let chill in the fridge for four hours.
Scoop and enjoy!
- 2 packages raspberry jello
- 1 cup water
- 1 can cranberry sauce (no chunks)
- 1- 20 oz. can crushed pineapples, undrained
- 1 cup chopped pecans
- Boil water. Add in raspberry jello packages, stir well.
- Add in cranberry sauce and mix until smooth
- Add remaining ingredients, stir well.
- Let sit in refrigerator for four hours.
- Serve and enjoy!
